Green Garlic Salad Dressing
This time of year, Alison and Nat eat a lot of salad - I mean, we are like a bunch of rabbits at the dinner table :) When the lettuce mix is this pretty, it’s good to indulge in some leafy greens every day. Our favorite dressing for this time of year is a simple and delicious one that involves some immature "green" garlic. Keep it in the fridge for up to 2 weeks, just needs a good shake before use.
GREEN GARLIC SALAD DRESSING
1/2 cup mild vinegar (rice wine, white wine, or champagne)
1 Tbl. Dijon (or 1 t colemans mustard powder)
2 Tbl. Honey
1 Tbl. salt (more or less to taste), and a few cracks of the pepper mill
1/2 green garlic stem
3/4 C - 1 C Olive Oil (depends on how much bite you like to your dressing)
Combine garlic, Dijon, honey, salt and green garlic in an immersion blender or food processor. Blend until smooth
Slowly stream in the oil while the blender is running (slowly at first then with increasing speed) until fully emulsified.
