We’ve had a good run with these amazing daikons this winter, and as we come to the end of their storage season, we are diving into their preservation with one of our favorite applications - kimchi! This is a milder (as far as kimchi goes) Korean pickle made with our funky and crunchy daikon and a slew of chiles and spices.
