This divine bulb of anise can be used in many ways including shaved and combined with apples and lettuces for a brilliant salad (soften first in a sprinkle of salt and sugar), roasted under a pasture-raised chicken, braised… the most delicate parts of the fronds can be plucked and added to salads or a garnish for meats and veg, and keep the stalks for broth.
